Hybrid traditional/ancestral method sparkling 1/3 2020, 2021 and 2023 vintages. Hand picked, whole bunch pressed, wild fermentation, stored in old barrels. Blended and bottled while the 23' vintage was still fermenting. 2 years full lees, hand disgorged ‘a la volée’.
Tim Ward, originally from Brisbane before moving down to Melbourne to pursue wine studies. After studying, he moved around the world working everywhere from Priorat in Spain, Hawkes Bay and Martinborough in New Zealand, St Estephe in Bordeaux, France and finally in the Yarra Valley in Victoria.
