    Fermented in two puncheons for 12 months w/ a blend of pediococcus, lactobacillus, brettanomyces and saccharomyces.

    The Winery

    Casey grew up in Marlborough, New Zealand surrounded by vineyards, wine, music and Mum's famous cooking. Although unlikely at first it was no surprise he ended up in this industry.
    He spent four years travelling and working in wineries around the world - learning techniques and skills, working with different climates and fruits before completing his Graduate Diploma in Oenology. He then moved into the brewing industry working for two years at a respected brewery in Melbourne before heading across to Toronto, Canada to gain experience at a small mixed fermentation brewery/blendery.
    For as long as he can remember Casey has wanted to do something independently and represent his creative journey - this project will do just that.
