Fermented on skins in traditional clay vessels (táo guàn / 陶罐) for 30 days, with 6 month post-ferment maceration. Aged in neutral 225L oak barrels for 10 months.
Founded in 2017, ex-sommelier Ian Dai Hongjing, is a travelling negoçiant / 'nomad winery' that produces idiosyncratic cuvées experimenting with extended maceration, alternative varieties, and multi-vintage blending.
