Hand harvested at 12.4 Baume on the 17th of March.

Whole bunch pressed to old French oak hogsheads with full solids. Wild yeast fermentation. Some secondary, malolactic fermentation occurred naturally, but wasn’t monitored. 7 month maturation in old French oak hogsheads on full ferment lees. Bottled unfined, with a light filter and minimal sulphur.
