Max Sein Wein 'Autochon' 2022
"Max sein Wein – Les Autochtones" (sometimes called Autochton) is a highly regarded natural wine from German winemaker Max Baumann in Baden. It is a pure, expressive 100% Silvaner that is naturally fermented, un-fined, unfiltered, and made with zero added sulfites for a crisp, mineral-driven, and textured profile.
Profile & Tasting Notes
Grape: 100% Silvaner (sourced from 40-60 year old vines).
Winemaking: Grapes are handled gently, with a blend of direct-pressed and skin-macerated fruit. It spends 9-10 months aging in old wooden barrels and 6 months resting in the bottle before release.
Flavor Profile: Zesty and mildly peppery, showing great tension with bright acidity and distinct minerality from the region's limestone soils. You can expect a slight vegetal nose combined with tropical fruits, pear, and sometimes a hint of smokiness.
Philosophy: Max Baumann trained under the renowned Gut Oggau and Judith Beck in Austria before returning to his family's vineyards in 2016. He employs strictly biodynamic farming and minimal-intervention methods in the cellar.
A fourth-generation winemaker, Max took over some of the family’s plots in 2016, which he has always farmed biodynamically, vinifying the wines without the use of additives. He brings to his practice years of experience working for other talented producers in the region, including Gut Oggau in Burgenland.
