About this wine
Fin Wines “Nubbins” Sangiovese 2025 is a small-batch, minimal-intervention red made from Heathcote-grown Sangiovese. Crafted by the Fin Wines collective in Victoria, the wine focuses on freshness, texture and drinkability while still retaining the savoury character typical of the variety.
The fruit is fermented naturally with gentle extraction techniques to preserve vibrancy and aromatic lift, before maturing in seasoned oak to soften texture without overshadowing the fruit.
Tasting notes
Light- to medium-bodied with aromas of sour cherry, wild raspberry, blood plum and dried herbs layered alongside subtle earthy spice and mineral notes. The palate is juicy yet savoury, showing bright natural acidity, fine chalky tannins and a crunchy, refreshing finish.
Style & winemaking
Produced using a low-intervention approach, the wine undergoes wild fermentation with minimal additions and careful handling throughout the process. Gentle skin contact and restrained oak maturation help maintain freshness, structure and varietal purity.
The resulting style is energetic, savoury and highly drinkable — modern Australian Sangiovese with a lo-fi edge.

Pairs beautifully with:
Woodfired pizza
Tomato-based pasta dishes
Charcuterie and antipasti
Grilled lamb
