The Last Drop ‘25 is a minimal-intervention, skin-contact blend combining 85% Yarra Valley Sauvignon Blanc with 15% King Valley Pinot Grigio. Spending 90 days on skins, it was the final parcel pressed for the 2025 vintage—hence the name. This extended maceration builds texture and complexity while keeping the wine lively and approachable, balancing fruit intensity with freshness and drinkability.
Tasting notes
Juicy and medium-light in body, with notes of tropical fruit—think passionfruit, pineapple, and ripe citrus—layered with a gentle phenolic grip. A subtle saline edge adds lift and savouriness, carrying through to a fresh, slightly textural finish.
Style & winemaking
Made in a minimal-intervention style, this wine saw 90 days on skins, extracting both flavour and structure from the grape skins. The Sauvignon Blanc brings aromatic lift and acidity, while Pinot Grigio contributes softness and texture. Being the last wine pressed of the vintage, it captures a more developed, skin-influenced profile while still leaning into vibrancy and ease of drinking.
