Minimal approach, whole berry fermented, wild yeast, no fining and filtering, aged in old oak and stainless steel to let the fruit and vineyard shine with just enough sulphur to ensure its safety
Pat, Ben and I (Micah) are three friends who met whilst running the vineyard at Lonestar Creek Vineyard, Woori Yallock in 2020 during Covid. We wanted to create a wine label where we source fruit from the best possible vineyards we could find, whilst keeping the wine at a price point that allows more people to be able to access it. The wine had to speak of the vineyard and fruit that went into it rather than fancy techniques. Mostly wild yeast, unfined and unfiltered with sustainability at the forefront.
