Brothers Charles and Guillaume Soulier farm 10ha of vineyards around the tiny village of Saint-Hilaire-d’Olizhan in the Gard, Southern France, about 30 minutes west of Avignon. Taking over from their father in 2014, they made their first wine in 2015. They primarily grow Grenache and Syrah, alongside forgotten local varieties including Counoise, Terret Noir and Picardin.
The brothers follow biodynamic principles, with a strong focus on soil health and biodiversity. They avoid heavy machinery, using a horse for ploughing and doing the rest by hand, while goats, sheep and chickens roam the vineyards, managing vegetation and fertilising the soils. The diverse soils range from sand and clay to red clay, large pebbles and abundant limestone, while trees and plants create a thriving, biodiverse environment that forms the foundation for their beautiful wines.
