  • Cork Dork

    Planted in 1960 on clay-limestone soil, the Hautes
    Côtes de Beaune plots are located in Mandelot, at an
    altitude ranging from 300 to 400 meters. The yield is
    30 hectoliters per hectare. The Hautes Côtes de Beaune Pinot Noir grapes harvested on September 28, 2021, were completely destemmed and placed in wooden vats, where they monitored the fermentation daily. They performed pump-overs or punch-downs, depending on the
    tasting. After 17 days of fermentation, they decided to
    remove the pomace and press it. The wine was then
    transferred to 228-liter barrels for aging. After
    12 months, it was ready to be racked and placed in
    tanks for 2 months to harmonize and stabilize the
    barrels before bottling. No sulfites were added during
    vinification, only after malolactic fermentation and just
    before bottling.

  • The Winery

    After a chance meeting at a dinner party nearly 10 years ago Alexandre Aires and Pierre-Alexandre Soltana became great friends and after years working in similar roles they decided in 2018 to start their project Maison A&S. Pierre-Alexandre has worked for Comtes Lafon for more than 10 years. Alexandre has worked for 8 years for Domaine De Bellene where he performs all the cellar work. Maison A & S ‘philosophy is to work in harmony with nature to get the best fruit under the most perfect conditions, to make the best wine to bring people together and share about it and always try to make it better. For now they buy their grapes from organic producers who are also their friends but are in the process of beginning a lease for the 2022 growing season. In the cellar they make no additions other than small amounts of sulphur.
