The estate is certified in organic and biodynamic control (Demeter). The harvests are only manual. Fermentation is spontaneous with indigenous yeasts. The vinification is without any input or sulfur, it is "Natural" The blend of equal parts of the two grape varieties carried out its alcoholic and malolactic fermentations in vats and demi-muids. The foaming and aging on slats for 36 months brought back a finesse of bubbles with a beautiful creaminess. During disgorging, no liqueur was added.

Domaine Loew is a family winery located next to Strasbourg. It was founded in 1996 by Etienne Loew, coming from a family with a rich history dating back to the 18th century. By practicing certified Biodynamics (Demeter and Biodyvin), the estate favors manual harvesting, enhanced by the presence of sheep and goats in the vineyard in the fall, thus promoting the microbial vitality of the soil.
