Handpicked from the certified organic Windowrie Vineyard in Canowindra & from the Freeman vineyard in Hilltops, practicing organics. Merlot, Shiraz, Cabernet Sauvignon & Graciano were direct pressed to stainless steel to begin fermentation. As the fermentation develops the wine is then bottled before the natural sugars and yeasts completely dissipate, this allows the natural carbonation to develop once the bottle has been crown sealed. Bottled unfiltered, disgorged with zero additions.

Their grapes are sourced exclusively from organic and biodynamic vineyards across New South Wales, including their own “home” vineyard in the neighbouring Kanimbla Valley—only a short distance from the Colman residence and winery.
